It happens every night. Dinner. Sometimes it takes me by surprise, but most of the time not. With everyone going different ways most of the day, I think it’s super important for us to all eat together and I’ve tried to protect this time as much as possible. Paired with the fact that I actually like to cook, when I know what to cook, and I have all the ingredients to cook. And while the drive through is convenient, sometimes necessary, and tasty, it can also be expensive, fattening, and boring. So I’m here to help some “sista’s” out. I’m going to share with you a meal that is my “go to” for those nights when 4 people need to be 5 different places at 3 different times. This is a meal for the family that has sports practices to get to, dentist appointments to be at, and whatever else you can throw into your evening without completely losing it. It takes literally 5 minutes to make (I timed it), and if you have old enough kids – just set the ingredients out and let them assemble.
5 Minute Meal: Southwestern Bundles
Ingredients: salsa, sliced roast beef, ranch dressing, tortillas, shredded cheese, sliced olives
Layer :
tortilla and ranch dressing,
Then your salsa
roast beef
cheese
and black olives
Fold into a bundle, folding in 2 opposite sides
then rolling
Microwave for 45 seconds
And then pat yourself on the back for dinner done in 5 minutes.
