Baking Memories With My Kids {S’mores Cookie Recipe}

S’mores….mmmmmm…gooey, delicious, messy s’mores. In my family, last minute desserts are usually an easy thing, because there is a really good chance of opening our pantry doors and finding some marshmallows, graham crackers and chocolate. We absolutely love the darn things. And apparently so do a majority of people on Pinterest. Last year, it seemed like S’mores were the new pumpkin. Every time I logged on there were a slew of new recipes or crafts involving s’mores. I resisted clicking through all of them, by hoping to keep our love in the simplest form.

However, today I am joining the ranks of blog recipes with a s’more theme. My husband has been away on a difficult work trip for a week and the kids and I are bursting at the seams for him to get home and discover the treat we whipped up. This man of mine works so hard to provide for us. The least I can do is finally craft a recipe for a s’more cookie that doesn’t turn into a crispy pancake. And after much trial and error, by golly, I think I’ve done it.

Before we get started, I have a confession.  These cookies were supposed to be from the children and myself…emphasis being on the children.  I, Anna, am a control freak, especially when it comes to the kitchen.  I dream up these beautiful scenarios of my children cheerfully taking turns adding ingredients, as we all laugh in slow motion with a cloud of flour slowly falling to the ground, but then instantly disappearing.  Instead, it usually looks a little more like my children pushing each other off the chair so that they can get a better look, spilling half of the ingredients on the floor over a fight as to whose turn it was to pour it into the bowl, and myself, the adult, losing my cool because I have lost count of how many cups of flour have been added.  Doesn’t that just sound dreamy?  I covet the happy memories of being in the kitchen with my children, and when I sit down down to think about why I am such a control freak, I realize it’s not because I care about the flour on the floor or the, less than perfect, shape of the cookie or cinnamon rolls.  It is because we are all so stretched for time and I already don’t complete my list of MUST do’s on a regular basis, so the extra fun WANT to’s stress me out.  So today I took a baby step.  I quietly mixed all of the dry ingredients during nap time and when my oldest awoke, he and I had a special date making cookies for my husband.

Now that we’ve had that little recipe for life, let’s bake some cookies!

Gather up all of your ingredients to make the S’mores Cookie

As any good home economics teacher would instruct you, gather all of your ingredients to make sure you have enough and to save on time during the process.  These cookies can easily be made into an organic recipe, by simply swapping out ingredients.  I didn’t have time to run to Sprouts, so I used what was in the pantry.

Little ones can help add ingredients to the mixer.

First we are going to cream our butter and sugars in the mixer. This is a great time to let your little add ingredients and turn on the mixer.  Once it is fluffy, add the vanilla and the eggs, one at a time. Take this opportunity to do a math lesson with your little one by counting the eggs as they go in.

Next, crush up the graham crackers.  You can easily do this in the food processor, but I was trying to be quiet and didn’t want more dishes to wash, so I used the ol’ Ziploc and rolling pin method.

I pre-mixed the dry ingredients (salt, cinnamon, mini chocolate chips, mini marshmallows, crushed graham crackers, oats), so when we got to this step, we just poured it all in and it saved us on the mess.

Once everything is combined, use a small cookie scoop and place them two inches apart on a parchment-lined cookie sheet.  Bake for 8-10 minutes, until they are slightly brown on top.  Take out and allow to cool on the cookie sheet for 2 minutes, then transfer to a cooling rack.

Scoop out extra dough and freeze for an easy batch in the future. It saves on waste and over indulgence.

Now this batch makes a TON of small treats, so I bake a dozen or two and scoop and freeze the rest.  This is another excellent job for your special helper (mine is 4 years old).  Fill a sheet with scoops and pop it in the freezer until frozen and transfer to a freezer bag and now you can whip up a batch anytime!

S’mores Cookies

1 cup butter, softened
1 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt (less if sea salt)
1 1/2 teaspoon cinnamon
1/2 cup graham cracker crumbs
1 cup mini dehydrated marshmallows
1 cup mini chocolate chips
3 cups whole oats
Preheat oven to 350. Cream the butter and sugars.  Add vanilla and eggs, one at a time.  Mix all the dry ingredients together in a bowl and slowly add to the mixer.  Scoop small balls 2 inches apart onto a lined cookie sheet and bake 8-10 minutes.  Allow to set on the cookie sheet for 2 minutes and move to a cooling rack.
