Addicting Pumpkin Cornbread

I love Fall for so many reasons.  The changing of color on the trees, the perfect weather to enjoy the outdoors, and most of all the endless opportunities to indulge in PUMPKIN! I cannot begin to detail how much I love pumpkin.  I have an absolute belief that when Fall arrives, everyone should enjoy pumpkin “something” at least once a day.

One of my favorite pumpkin recipes that I could make everyday of the week is Pumpkin Cornbread. Cornbread is amazing. Pumpkin is amazing. Mixed together this recipe is out of this world!

Adding pumpkin to cornbread gives the cornbread a twist of fall spices while being deliciously moist.  My favorite meal to have Pumpkin Cornbread with is chili or soup.  I also love to make the cornbread in muffin tins so I can feel slightly better about eating it for breakfast because hey, it is a muffin, right?.

Here are the ingredients you will need (full recipe at bottom of post):

Two Boxes of Jiffy Corn Muffin Mix, 1/2 C Pumpkin Puree, 1/4t nutmeg, 1/cinnamon(optional - chocolate chips and muffin cups)

You will also need a cute little helper to crack eggs, mix and stir, and at the end lick the bowl.

It is such a simple recipe to make which is probably one of the other reasons I make it so often.

Make sure to preheat the oven before beginning according to the box instructions. First, mix together cornbread according to box instructions.

(I have found Jiffy Corn Muffin Mix to taste the best in this recipe)

Add nutmeg, cinnamon, pumpkin. Mix together.

There are times when I am feeling adventurous with my Pumpkin Cornbread, and want to take it to a whole new level.

So I add chocolate chips…then mix. (This step is optional.)

After mixing together, pour all ingredients into either a muffin tin or a regular pan. Sprinkle cinnamon on top.

I cook according to cornbread box instructions, and they always turn out perfect!

The final and most important step is to serve and enjoy, and repeat this process several times over!

Pumpkin Cornbread Recipe

Ingredients:

  • Two Boxes of Jiffy Corn Muffin Mix
  • 2 eggs
  • 2/3 C milk
  • 1/2 C Pumpkin Puree
  • 1/4 t nutmeg
  • 1/2 T cinnamon
  • optional – chocolate chips and muffin cups

Instructions:

  1. Mix together Jiffy Corn Muffin Mix according to box instructions
  2. Add pumpkin puree, nutmeg, and cinnamon. Mix together.
  3. Optional – add chocolate chips. Mix together.
  4. Spoon into muffin cups in muffin tin OR pour into 8×8 baking dish.
  5. Sprinkle cinnamon on top.
  6. Bake at 400F for 15-20mins.
  7. Serve, eat, enjoy!
