Easy Valentine’s Day Treat – Strawberry Granola Parfaits

Valentine’s Day really puts New Year’s resolutions to the test. All those sweet treats, chocolates, desserts just call your name. Can’t you just hear them? They’re saying “Eat Me” and “Take a Bite”.  As if you could just have one bite.
 
Instead of all those sugary Valentine treats, have something good for you. These Strawberry Parfaits are delicious and naturally sweet. They’re healthy too, but you don’t have to tell anyone. These are an easy way to get the kids to eat better too.
 
Create these easy parfaits for a special Valentine’s Day breakfast in bed or serve them for dessert after a wonderful dinner. Either way, you’ll love the sweet strawberries, vanilla yogurt and crunchy granola. If you don’t like granola, you can substitute breakfast cereal or chopped nuts. Just substitute what you like and layer, layer, layer.
 
 
Strawberry Yogurt Parfait
 
INGREDIENTS
  • 1 large container of vanilla Greek yogurt.
  • 1 pound of fresh strawberries (chopped)
  • 1 package of granola
  • Small Mason Jars or 8 ounce bowls
 INSTRUCTIONS
  1. Add the yogurt and a few (2-3) strawberries into a blender. Puree until you get a lovely pink color.
  2. Add 2-3 tablespoons of granola into the bottom of each mini mason jar.
  3. Top with a few tablespoons of yogurt and then diced strawberries.
  4. Repeat until you reach the top and garnish with more strawberries.

So there you have a naturally sweet Valentine’s Day treat. Enjoy this for a easy breakfast in bed or top the jar with a lid and take it with you. I hope you enjoy this recipe. Have a great Valentine’s Day with your loved one.
